We dreamt of becoming truffle farmers ever since we first encountered them while living in London back in 1999. No one knows exactly how black truffles grow so attempting to cultivate them is a risky venture and a lot of hard work! Not surprisingly then, when we planted 5 acres of oak trees inoculated with the Périgord Black Truffle on our family farm in Australia’s Southern Highlands, most people thought we were definitely mad - and the Truffle Mad name was born! Thankfully, three and half years later, we have produced our first truffles which are infused in our signature gin to create the world’s first “Paddock to Pour” truffle gin.
Truffle Mad Gin is the first exciting cab off the rank for Redwood Distillery and Truffle farm, with plans to add a whole range of truffle-based products that take the amazing flavour of truffle to a whole new level, in ways that will appeal to many different people.
