“When love is not madness,
it is not love.”

Pedro Calderon de la Barca

Our Story

We dreamt of becoming truffle farmers ever since we first encountered them while living in London back in 1999. No one knows exactly how black truffles grow so attempting to cultivate them is a risky venture and a lot of hard work! Not surprisingly then, when we planted 5 acres of oak trees inoculated with the Périgord Black Truffle on our family farm in Australia’s Southern Highlands, most people thought we were definitely mad - and the Truffle Mad name was born!

Thankfully, three and half years later, we have produced our first truffles which are infused in our signature gin to create the world’s first “Paddock to Pour” truffle gin.

Truffle Mad Gin is the first exciting cab off the rank for Redwood Distillery and Truffle farm, with plans to add a whole range of truffle-based products that take the amazing flavour of truffle to a whole new level, in ways that will appeal to many different people.

“We are so fired up to get everyone around Australia genuinely excited about truffle, by experiencing it as so much more than an exclusive, stand-alone ingredient to be enjoyed sparingly.”

Paddock to Pour

Truffle Mad Gin is the world’s first “Paddock to Pour” truffle gin, with the truffles grown on our family farm used to create this truly unique and indulgent combination.

Being new to making gin, our new on-farm Redwood Distillery has collaborated with some of the best people in the business, including Earp Distilling Co. and “The Martini Whisperer”, aka Phillip Jones, to help us bring our vision to life.

Starting with our fresh black truffle as the hero, we infuse unique Australian botanicals such as Kangaroo Island Honey and Tasmanian Mountain Pepper, plus a couple of other secret spices, to achieve an out-of-this world aromatic experience.
